Spicy Salmon Rice Bowl

I’d like to think of this as a cross between a deconstructed spicy salmon sushi roll and a Buddha bowl. I’ve been on an Asian cuisine kick lately, and this recipe is definitely a result of that. A pound of salmon is baked in a sweet and zesty marinade, then topped with a spicy mayo. The rich fish is then placed over a bed of sushi rice and decorated with homemade pickled veggies and a fresh garnish of cilantro and scallions, then sprinkled with a beautiful display of crunchy black sesame seeds. Oh, and why not plop in slices of a perfectly ripe avocado?
